Brunch Club : My Fluffy Banana Pancake Recipe

There is no creative challenge I like more in the kitchen than coming up with a delicious dish based on what needs to be used up before it goes out of date or has to be thrown away. 

I know something we all struggle with is how to make the most of our suddenly over-ripe bananas! (Seriously though… they go from yellow to brown overnight! What’s up with that?!). 

Put your banana bread baking tin to one side this time around and try out my simple fluffy banana pancake recipe…

Fluffy banana pancakes recipe

Makes approximately 14 chunky little pancakes. 

Ingredients:

  • 330g self raising flour
  • 3 overripe bananas
  • 2 eggs
  • 250ml milk
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoons baking powder
  • Two generous pinches of salt
  • A little bit of butter for frying

Method:

  1. Sift the flour, baking powder and salt into a large bowl and mix together.
  2. In another bowl mash up the bananas with a fork until they are as smooth as possible. 
  3. Whisk the eggs, milk and vanilla in together with the bananas until fully combined. 
  4. Tip the wet mixture into the bowl containing the dry mixture and whisk together to create a smooth and creamy batter. 
  5. Heat the butter on a large non-stick frying pan. Add small ladle-amounts of the batter to the frying pan. The amount of batter used per pancake depends on how big you want your pancakes to be – I’ve found that approx. 4/5 tablespoons of batter makes a nice-sized pancake.
  6. Cook on one side until bubbles begin forming on the top layer and the bottom of the pancake feels sturdy when you attempt to slide a spatula under it (this normally takes a couple of minutes). 
  7. Then flip the pancake over and allow the underside to cook through. The pancakes should rise up and look fluffy in the middle. Repeat until you’ve used up your batter. 

Serving Suggestions

These delicious little pancakes don’t have any sugar added to them so they are ideal for both sweet and savoury toppings. I like mine with maple syrup and berries but honestly the sky’s the limit – feel free to top with whatever you like best. Crispy bacon, Nutella, toasted nuts, yoghurt, jam… take your pick!

These are also fab reheated the next day too – just pop them in the oven or microwave and the taste just as good.
